Chipotle Chicken Fajita Quesadilla


Why is this a Foodgasm? Chicken with onions and peppers with a smokey chipotle flavor balanced out with the creaminess of melted cheese and all encased in a slightly crunchy flour tortilla---- will make your taste buds do the tango or perhaps we should say the mexican hat dance!

This is a 6 point foodgasm!!*  Recipe yields 6 servings
What you need:

1 large chicken breast
6 flour tortillas
1 large onion, halved and sliced
2 bell peppers (1 red and 1 yellow), sliced
1 1/2 cups low fat shredded mexican cheese (1/4 cup per quesadilla)
1 tsp EVOO
juice of 1/2 lime
2 tsp smoked paprika
3 tsp chipotle seasoning

How to make it:

In a large skillet on medium/high heat add in the EVOO.  After the skillet has had some time to heat up, place the diced chicken breast in. Once chicken starts to turn white add in the onions and peppers as well as the seasonings; stir well. It is done when onions are translucent. On a panini press or George Foreman grill place on tortilla with 1/3 cup of the stir fried chicken and vegetables, 1/4 cup cheese.  Fold over and keep cooking until outside is slightly browned. You can serve with sour cream or as I used 0% fat greek yogurt.  It was actually really good! Please enjoy and let me know what you think!
