Caprese Grilled Cheese

 

Why is this a Foodgasm? Grilled cheese is always amazing...but make is fresh mozzarella, fresh basil and tomatoes (from my garden) and a dash of Romano cheese to give it that salt and you got a gourmet twist on a classic! It is melty, creamy, tomato magic, salty from the Romano and basil sweet....magnifico!

This is an 8 point foodgasm.


What you need:
2 slices of bread (I was keeping it healthy with whole grain, italian bread would be even better!)
2 slices of fresh mozzarella
2 slices of tomato- seeded
2 basil leaves
A dash of Romano
EVOO
(feel free to add prosciutto or a drizzle of a balsamic reduction)

How to make it:
Heat up your Panini Press of George Foreman grill. Spray bread with EVOO, set on grill.  Add on the tomatoes, basil and Romano.  Spray other slice of bread on both sides and add it on top.  Now press down the grill or press, cook for a few minutes until golden brown on the outside.

NOW YOU EAT IT!!! Sooo good, sooooo damn easy and pretty good for you!
