Somoa Pancakes


Why is this a Foodgasm?

Well imagine you took a Somoa then pancake-ized it! Is that a word, who cares? This is NY Foodgasm we break the rules! What if I also told you I lowered the fat, fuhget about it! Yeah I totally did it! Why? There is no reason to have all the fat when you keep all the yummmm! That is the NY Foodgasm way!

I came upon an AMAZING recipe for Pistachio Pancakes on Peanut Butter and Peppers, one of my favorite food blogs and I had to make them. I mean Greek Yogurt in a pancake, I had to try this! So I took the same basic recipe and made some minor adjustments to make them chocolate with some chocolate chips.

What you need

Pancakes

1/3 cup plain nonfat greek yogurt
2 egg whites (or 1/3 cup egg whites, the kind you buy in the carton)
1/4 cup 2% milk
1/2 teaspoon vanilla extract
1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/4 cup cocoa powder
2 tablespoons light buttery spread (melted)
1/4 cup sugar
1/4 cup chocolate chips
dash o' salt

To Top

caramel syrup
toasted coconut

How to make it

1- Heat a nonstick frying pan on medium, spray with cooking spray if desired.
2- Melt light buttery spread in the microwave for about 15 seconds.
3- Mix together all dry pancake ingredients (flour, baking soda, sugar and cocoa powder)
4- Add in your greek yogurt, egg whites, melted light buttery spread. Combine until there are no more lumps.
5- Add in the chocolate chip goodness
6- I used a large serving spoon to add the pancake batter into the frying pan.
7- Cook until batter bubbles and bubbles stay open and don't collapse on themselves.
8- Drizzle with caramel and sprinkle with toasted coconut.

Nutritional Information

Recipe yields 6 pancakes for 3 servings of 2 pancakes. Includes 2 tbsp of caramel and a sprinkle of toasted coconut!
