Beer Month's First Recipe Roundup is here with my Dos Equis Rice and Beans and much more!


 Why is this a Foodgasm?

Rice and beans is a nice simple dish, but for me I always have to take it to the next level, that's just how I roll. So it being Beer Month and all I figured why not add some cerveza to the mix and top it with some refreshing lime "sour cream", yeah it's really Greek yogurt (don't worry you won't be able to tell the difference). I wanted some extra protein so I topped with grilled chicken seasoned with chipotle powder. This is a quick and easy dish loaded with flavor and fiber! What you need

1 teaspoon olive oil
1 1/2 medium red onion, chopped fine
1 teaspoon garlic
1 can kidney beans, rinsed
1 can small pink beans, rinsed
2/3 cup Dos Equis (or you can try Corona)
1/3 cup beef broth
1/2 teaspoon salt
1/2 teaspoon dark chili powder
1/2 teaspoon paprika
1 1/2 cups cooked brown rice

1 large chicken breast cut thin
sprinkled with dried chipotle seasoning, salt and pepper

Lime "sour cream"
1 cup non fat Greek yogurt
Juice of 1/2 lime

How to make it

1- In a nonstick frying on medium pan saute' onions in olive oil until clear
2- Add in your rinsed beans and spices.
3- Pour in your beer and broth.
4- Simmer until slightly reduced
5- Add the rice and cook on low for another couple minutes, allowing the rice to soak in the flavor.

For chicken just grill with chipotle seasoning, salt and pepper. Cut into strips and place on top.

For Lime "Sour Cream" just add the juice of 1/2 lime to a cup of Greek yogurt

Enjoy with a nice Dos Eqis!
