Great South Bay Blood Orange Pale Ale Chicken with Lemon Roasted Potatoes


 

Why is this a Foodgasm?

I took a different approach with this recipe...I let the beer decide what it wanted to be. I started with a local fave Great South Bay's Blood Orange Pale Ale. With this beer it has been love at first sip- crisp, light, just the right amount of orange flavor and so easy to drink! I wanted to make sure to get in some of my awesome local long island beer. I love the local craft beer scene. Immediately I thought orange chicken, kinda like the one you get from a Chinese place, but healthier and with local craft beer twist (seriously is there anything better??). 

I knew this recipe needed to happen, but how did I execute it. So I kinda went the route of Chicken Fracaise, but made a beer reduction syrup with this. The results were AMAZING! Sweet, but not syrupy sweet and it was light. It paired perfectly with these easy lemon roasted potatoes! You must try this recipe and please do try and get your hands on this beer- you will not be disappointed!


What  you need

For chicken

1.5 pounds chicken breast, sliced thin
2 tablespoons Light Olive Oil
1/2 cup flour with dash of salt and pepper

For Blood Orange Pale Ale Glaze

2 cups Great South Bay Blood Orange Pale Ale
1 teaspoon brown sugar
2 teaspoons granulated sugar
3 slices of blood orange
Juice of 1/2 blood orange

Potatoes

5 yukon gold potatoes, cut into long slices
2 tablespoons extra virgin olive oil
zest of 1/2 lemon
juice of 1/2 lemon
salt and pepper to taste

How to make it

1- Preheat oven to 415ยบ
2- Toss potato wedges with oil, lemon zest salt and pepper and place on large cookie sheet
3- Place a large skillet with olive oil on the stove at medium heat for 30-40 minutes.
4- Dredge chicken fillets in flour mixture
5- Cook on both sides about 5 minutes each
6- Set chicken aside
7- Pour beer and juice on 1/2 orange into the same skillet on medium heat and let it simmer and reduce until it thickens slightly.
8- Add in your sugars and stir, let it simmer some more.
9- Pour over chicken. I garnished with some roasted orange slices.
