Reduced Fat Double Chocolate Zucchini Bread

This decadent looking double chocolate zucchini bread is reduced fat for your waistline's pleasure, but tastes so right making your mouth VERY happy!


2 zucchini recipes in one week, that's what you get with a zucchini that size, like the one I showed you in my last post. What's more they're both zucchini bread. Well I fell in love with it so much I had to chocolify it... (totally a word or should be).

So for the longest time guys I hesitated to write that my recipes were healthy or lower in fat or whatever. I thought oh people know this food blog has a healthy focus... but really unless you read all the time you don't. So I gotta call it out. But I hesitate because most people will dismiss it thinking this... "Ughhhh reduced fat, low fat, healthy... BORING!" I used to think that way too before I embarked upon a new healthy lifestyle.

Half the Fat Zucchini Bread

I took the highest rated zucchini bread recipe and reduced the fat by half and the sugar by a third! My zucchini bread keeps it healthy, but has the same great texture and taste!


You may be rolling your eyes at me, you're thinking "Ewwwww it's gonna taste like crap with half the fat, why did you do that?" Come on now... do I look like a chick that would eat crappy food?! I founded NY Foodgasm for the purpose of creating healthy recipes for those of us that reeeeallllly love food. Good food, not "diet food".

Indian Spiced Kabobs

In the mood for Indian? These wonderfully spiced yogurt marinated kabobs are not only easy to prepare, but incredibly healthy and low in fat!


You may not know this, but I also LOVE Indian food. I used to eat Italian like alllll the time, 'til I met my husband and I really got adventurous with ethnic foods. He was unafraid, even since an infant of trying new things. Me- funny enough-- I was a pizza, pasta and hamburger girl. Yes I have changed quite A LOT over the years!

I discovered Indian and especially Chicken Tikka Masala- OMG- YUMMMM! Well if you do not know of the tikka I will explain- it's chicken marinated in a yogurt marinate and cooked and simmered into a sauce made with beautiful spices such as garam masala, heavy cream and tomato paste. It is heaven or hell depending how you look at it.

Heaven in your mouth, hell on the hips...

Summer Weight Loss Challenge- Week 6

This week's Summer Weight Loss Challenge Tip is 80/20 RULES! Eat healthy 80 percent of the time, the other 20 indulge in whatever you love most!


This is my favorite philosophy and I like to explain it as 80% healthy and watching portions 20% bacon and beer! I mean you guys know following me on Facebook and Twitter just how much I love the tasty things in life and my passion for craft beer. A lot of people wonder how do you maintain your weigh loss when you love those things? The answer is I love them in moderation and I don't keep lots of things like that in my house.

I think this photo illustrates 80/20 pretty nicely, a well balanced portion controlled dinner after a workout with a pint of beer. A little indulgence with lots of veggies!

You can see 80/20 as weekdays are strictly healthy, weekends you loosen the reigns a bit. So usually during the week for me there is no beer. I mostly eat salads for lunch, a smoothie or Greek yogurt with fruit and granola for breakfast and a light dinner. On the weekend I may go to a brewery for a tasting, have a couple pints with friends, or eat a nice piece of cake. I choose my indulgences and don't beat myself up for them since I am in control. I decide when to indulge and how.

During the weekdays when you want some ice cream, think about it... DO I want this now? Would it taste sweeter on the weekend on the beach? Just think about when you indulge and how often. If you can remember you indulged in a Carvel Sundae the night before, you want to second guess indulging again for the next couple days.

When I was on Weight Watchers they gave us points. Every week you had an extra 49 points to blow on whatever you liked. Sometimes I would blow it all in one day, one meal or spread it out through the week. You can think of the 80/20 the same kinda way. If you go have a 12 course chef tasting you will need the count that as the entire 20% LOL! But if you wanna have a little chocolate every night you can do that too!

What is WONDERFUL about 80/20. It means I can each EVERYTHING I want, just not all at once. But knowing you CAN eat something doesn't make you obsess over that cake. You may have a sliver and call it a day and give yourself a pat on the back for having that cake!

Citrus IPA Poundcake #beermonth


What is an IPA you may say? (That is what my mom said to me anyways) IPA stands for India Pale Ale. IPA's belong under the larger umbrella style of Pale Ales, meaning that they use pale colored malts. The IPA is known to be a hoppy beer so you really taste the hops more than the malt. Digging deeper than that, the type of hops you use can bring out certain characteristic flavors and aromas. Many hops can bring out citrusy flavors naturally, so that is where the idea for this recipe came in...

IPA's are a hot style right now, with Double IPA's (also known as an Imperial IPA) and Triple IPA's trending I thought I would need to experiment with this style. To bring out the citrusy notes in the IPA I have wanted to make this pound cake for a WHILE now, to experiment and make something memorable with it.

It's good to have friends that brew craft beer! My friend Matt from Outer Lands Brewing Company asked me to try their Good Mojo IPA. It was the day after a beer festival, I didn't wanna look at beer or even drink it, but I took a taste. It's nicely balanced, not bitter at all with great citrus notes. Exactly what I needed for this recipe! For a non IPA drinker or someone that does not like a bitter IPA this craft  is for YOU.

Pina Colada Pound Cake


Why is this a Foodgasm? 
Piña Colada is the stuff summer is made of and I don't know about you, but I could use a slice of summer. If you're in the part of this country where you experience the bitter cold...I know you are sooooo done with all of this. I have the answer here! A lowfat easy and delish  piña colada poundcake. 

Loaded with not only fresh pineapple and coconut milk- it also has coconut oil and is covered in toasted coconut. This dense and delish cake is a treat you don't have to feel any guilt for at all! 


What you need

1 cup sugar
1/4 cup coconut oil, warmed up in microwave to become a liquid.
3/4 cup crushed pineapple
1 egg + 1 egg white
1 cup coconut milk
1/4 cup Greek yogurt
zest of 1 lemon
1 teaspoon vanilla extract
2 cups white whole wheat flour
 1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

How to make it

Preheat oven to 350º
1- In a mixer with paddle attachment, cream together sugar and coconut oil.
2- Add in the egg and egg white with the Greek yogurt, coconut milk and vanilla extract, be sure to scrape sides if you see the sugar and coconut oil sticking to the sides.
3- With the mixer on low, slowly add in your dry ingredients and mix until well combined.
4- Bake for 45 minutes to 1 hour. Will be very moist!

Spinach and Feta Strata


I cannot get enough of the spinach and feta combo. I made Spinach and Feta Orzo, I made a Spinach and Feta Salad and now I got for you a Spinach and feta Strata. It is part quiche, part potato and part fritata. In fact, I had a really had time naming this, LOL. But a food bloggers friend of mine came up with something sorta like this and called it a strata, so thanks Joanne from Joanne Eats Well with Others. You saved me on this one!

Why is this a Foodgasm?

Spinach and Feta, it is magical and delicious and totally Greek. I like to give a nod to my hetitage when I can and they knew what they were doing with this flavor combo. Salty, creamy and you got a little bitter from the spinach, it just works. Then of course I add in some caramelized onions, garlic and you got yourself a full blown Greek-gasm. I love that this has a layer of potatoes too. It's a great filling meal, especially nice with a side salad for breakfast, brunch, lunch or even dinner.

Chocolate Covered Strawberry Torte and a Giveaway


This is my gratuitous Valentine's Day post. For so many years I loathed this holiday. It is the single gal's day to remember she is single. I remember in college all my friend and I didn't have a boyfriend, so we all banned together and had our own little party (under the bandstand of the college). That was one of my favorite Valentine's Days yet! So all you single ladies don't feel bad, feel empowered because V-Day is just silly even when you have a man or woman.


But still I felt compelled to make a cutesy little cake with strawberry hearts baked into it. I guess I have those two sides: the Martha Stewart and the chick that drinks craft beer and swears. Or as my husband said best: "You are like Martha Stewart, but you say fuck a lot." Yeah that sums me up. That is also why I need to start making videos for you guys! It would be loads of fun for you to meet me, like really get to know me.

#HolidayDetox Part Three: Dinners that satisfy


Part 3 of the #HolidayDetox series explores dinner

Dinner has got to be my favorite meal of all! When I was on WW, I saved liked half my daily point for dinner. I like a big satisfying meal. One that will satisfy my belly, my heart and my cravings. Dinner for me is a comfort and many times is my time for comfort food. But I gotta find a way to trim the calories of these meals that are usually loaded with fat. If dinner is your jam too you are gonna want to read this!

Not only do I have 1 dinner recipe on this post, well I have 2 awesomely easy kick-ass dinners that you can make in your crock pot! SCORE! Sooooo easy! And of course my girl Jennifer from Peanut Butter and Peppers is back with her killer dinner recipes! Check them out after my recipes.

Aside from just the food, here at tips to make your dinner more enjoyable and will also help you eat less! It took me a looooong time to learn this on my own during my weight loss journey, but I have shared them all with you and I assure you if you try some of these tips you will not only enjoy your meal more, but actually eat less.



Chicken pot pie stew with gnocchi


Why is this a Foodgasm?
Ultimate comfort right here. Chicken pot pie! I have kept all that you live about pot pie and made it lowfat and easy! So usually chicken pot pie is literally a pie with a crust. I simplified this a bit, while there is so crust, to satisfy that carb craving I added gnocchi, they act like a dumpling in the stew but they're even better. This pot pie has a great creamy texture and it is full of veggies and chicken and a trio of wonderful herbs. Thyme, Rosemary and Sage come together to beautifully season  this and give it that classic French touch. I would say this will keep you fuller longer than a small piece of chicken pot pie.


What you need

3 tablespoons butter
1/4 cup flour
1 32 oz. box of fat free low sodium chicken broth
1/2 teaspoon Rosemary
1/2 teaspoon Sage
1/2 teaspoon Thyme
Salt and Pepper to taste
2 small sweet potatoes, cubed
8 celery stalks, sliced
2 cups baby carrots, sliced
1 large onion, diced
1.4 oz. Chicken Breast, cubed
13 oz. Frozen Gnocchi





How to make it

1- In a large frying pan add 3 tablespoons butter let it melt on medium heat.
2- Add 1/4 cup flour and combine with melted butter.
3- Gradually stir in the 32 oz. box of fat free low sodium chicken broth.
4- Keep stirring on medium heat until it thickens.
5- Add in 1/2 teaspoon Rosemary, 1/2 teaspoon Sage, 1/2 teaspoon Thyme, Salt and Pepper to taste.
6- Put 2 small sweet potatoes, cubed; 8 celery stalks, sliced; 2 cups baby carrots, sliced; 1 large onion, diced; 1.4 oz. Chicken Breast, cubed; 13 oz. Frozen Gnocchi in the crockpot and add sauce to it and mix together.
7- Cook on low for 5 hours.

Chicken Cacciatore

Why is this a Foodgasm?

Does anyone do comfort food quite like the Italians? I recently ordered Chicken Cacciatore from a take out place near my in-laws house for dinner. On paper it sounded simple enough, chicken slow simmered in a white wine and marinara sauce. I want expecting much, but I wanted a lighter option compared to the cheesy, fatty, carb heavy meals usually availible on Italian take out menus. To my surprise it was soooo delicious! I did not at all feel like I missed out by ordering this lighter dish. Sooo I needed I make my own version and make it even healthier and also make it easy to prepare! So crock pot meet cacciatore, your new best friend!

What you need

1.5 pounds chicken breast, filleted 
1 yellow pepper, cut into strips 
1 red pepper, cut into strips 
1 orange pepper, cut into strips
1 red onion, sliced thin
5 baby Bella mushrooms, sliced
1 jar marinara if your choice 
1/2 cup white wine
1 tablespoon olive oil


How to make it

1- Put a base of veggies down place chicken over the top, rest of the veggies, then top with the sauce, white wine and olive oil
2- Cook on high for 4 hours
3- Serve over pasta

#HolidayDetox Part 1- Build a better salad for the win!



As part of my holiday detox series I aim to give you the tools you need to make 2014 the year you really eat healthy. Let's not start this year saying we are going on a diet or need to lose weight, this can make you feel bad about yourself. Instead empower yourself and say this is the year I learn to enjoy eating healthier. To find a balance of healthy eating and enjoying every minute. 

This has been my mission for NY Foodgasm from the beginning. To bring you healthy food that is fun and you can really enjoy thereby empowering everyone to become healthier and happier. I have lost 73 pounds the old fashioned way. Healthier eating habits and exercise. It's through that struggled I realized my passion and that is making a healthy lifestyle fun- because life should be fun! I can get all weepy with you about this struggle, it is still a struggle everyday. I love food second only to my husband, lol! But I found a way to lose weight and eat healthy that still keeps my passion for food alive and I want to share this with you! 

When everyone decides to eat healthier we all reach for a salad. Not all salads are created equal. There are two mistakes people usually make 1- making salads with more calories and fat than a cheeseburger combo meal or 2- making a salad so plain and boring and not at all filling.  Totally from one extreme to another. See the Guide below for tips for an awesome salad!

TIP: Be prepared! A lesson I have learned from a lot of my weight loss struggle is to learn to think ahead and prepare meals or components of meals in advance. For me I chop up all my fruits and veggies I will be eating for lunch though the week on Sunday. This is for two reasons: I have little time Monday-Friday during the work week and if I do not have something healthy prepared I will gravitate to something unhealthy in a moment of "hangery" weakness. You know, then you are sooo hungry you are angry?! So save yourself the heart ache and get this right from the start!

Cranberry Pecan Goat Cheese Salad

 Why is this a Foodgasm?

This salad is a perfect transition from the holidays to your new year. Why? It retains a lot of the great flavors from the season with cranberries and pecans, while helping you wean slowly off your sugar addiction since the dried cranberries and sweetened and the goat cheese adds a bit of sweetness too, even the fig Balsamic drizzle is sweet. Then there are so many different textures, creamy, crunchy, soft etc. Then you got those gorgeous colors, this is totally me- shades of purple and shades of magenta! LOVE it!

What you need

1 1/2 cups spring mix
1/2 cup arugula
1/3 cup finely sliced red cabbage
4 tablespoons pecan pieces
2 tablespoons crumbled goat cheese
3 tablespoons dried cranberries
A few thin slices of red onion
A drizzle of Fig Balsamic Glaze (I used Sophia Brand, if you cannot find this you can use a regular balsamic glaze, but this one adds sweetness.)
1 teaspoon Extra Virgin Olive Oil drizzles over the top.

How to make it

Add all ingredients to a bowl or lunch container, then drizzle with the Fig Balsamic Glaze and Extra Virgin Olive Oil.



 

Spanakopita Salad- Aka Spinach Pie Salad with Lemon Oregano Dressing


Why is this a Foodgasm?


I think you all know by now I am half Greek and one of my favorite comfort foods was Spanakopita aka Spinach Pie. Basically it is filo dough buttered in layers with spinach, feta and rice inside. It is one of those meals that makes me feel happy and safe. So I decided to make it into a salad. So I used fresh spinach and I cut it into strips so it would mix well with some cooked orzo that I added. Of course I topped it with feta, red onions for color and I also added some fresh lemon zest over the top of it. I made a really nice lemon oregano dressing to go with it too, sooo bright and tasty!

What you need

2 cups of fresh baby spinach, sliced into strips
1/3 cup cooked orzo
A few slices of red onion
1/4 cup feta cheese (I like Athenos the most)
2 tablespoons Lemon Oregano Dressing

Dressing 
Juice of 1 large lemon
7 tablespoons Extra Virgin Olive Oil
1 tablespoon Oregano (fresh if you got it)
Salt and Pepper to taste
Pulse in food processor, put in squeeze bottle for use.

How to make it

Add all ingredients to a bowl or lunch container, then drizzle with the Lemon Oregano Dressing.







Simple Arugula Shaved Parmesan Salad with Lemon and Pepper 

 

Why is this a Foodgasm?

Sometimes simplicity is best, especially when the flavors are well balanced. In this case, the pepperiness of the arugula along with the salty of the parmesan and the acidity of the lemon make this a beautifully balanced and simple salad! I would call this more of a side salad since there is very little protein. If you want to make it a meal, add some grilled chicken- done!

What you need

2 cups arugula
.5 oz shaved Parmesan cheese
Juice of 1/2 lemon
1 teaspoon extra virgin olive oil
freshly ground pepper (makes it MUCH better if it's freshly ground)

How to make it

Add all ingredients to a bowl or lunch container, then drizzle with the Lemon Juice and Extra Virgin Olive Oil.
