IPA's are a hot style right now, with Double IPA's (also known as an Imperial IPA) and Triple IPA's trending I thought I would need to experiment with this style. To bring out the citrusy notes in the IPA I have wanted to make this pound cake for a WHILE now, to experiment and make something memorable with it.
It's good to have friends that brew craft beer! My friend Matt from Outer Lands Brewing Company asked me to try their Good Mojo IPA. It was the day after a beer festival, I didn't wanna look at beer or even drink it, but I took a taste. It's nicely balanced, not bitter at all with great citrus notes. Exactly what I needed for this recipe! For a non IPA drinker or someone that does not like a bitter IPA this craft is for YOU.
Why is this a Foodgasm?
It is everything you love about pound cake with some IPA hoppiness and added citrus for super citrus intensity. The sweetness and tartness of the citrus balances nicely with the IPA. This IPA was even better for this since it was not too bitter.Taking note of the queen of craft beer recipes, The Beeroness, I adapted her recipe for blood orange pound cake to reduce the fat and to suit my tastes. This recipe has half the butter and tastes just as good!
What you need
recipe adapted from The Beeroness1 stick butter, room temperature
1/2 cup nonfat Greek yogurt
1 1/2 cup granulated sugar
1/4 cup lemon juice
zest of 1 lemon
zest of 1/2 orange
2 tablespoons fresh squeezed orange juice
1 tablespoon olive oil
2 eggs
1/3 cup IPA
1/2 teaspoon vanilla paste
2 cups flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
How to make it
1- Preheat oven to 315ยบ2- In a mixer blend together the butter and Greek yogurt until well combined and there are no lumps.
3- Add in the sugar until it's all dissolved.
4- Then go ahead your lemon juice, zest, orange juice, zest, eggs, IPA and olive oil.
5- With mixer on low add in your flour, baking powder and salt. Mix until well combined.
6- In a loaf pan sprayed with coconut oil, pour in your batter.
7- Bake for 1 hr and maybe up to additional 20 minutes. Test thickest part of cake with a toothpick.
