Foodgasm One Night Stand: Chocolate Pretzel Chunk Cookies with Salted Caramel Drizzle



Why is this a Foodgasm? 

Well sorry this is definitely a holiday one night stand. I made these for Christmas, actually made them twice and tweaked the recipe. Putting pretzels in a chocolate chip cookie and then drizzling with caramel and covering in sea salt. It is a sweet and salty paradise! You bite in and get the buttery cookie taste, then the chocolate and omg there is a chunk of pretzel, but it's not done OMG there is salted caramel on this too....woah! Salty sweet overload!



What you need:

3/4 cup unsalted butter (1 1/2 sticks)
3/4 cup brown sugar
1 egg
2 teaspoons vanilla extract
2 cups all purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
1 cup milk chocolate chips
1 cup crushed pretzel rods
2 tablespoons oil ( I used light olive oil)
1 cup caramel squares

How to make it:

1- Preheat oven to 350ยบ
2- Beat butter, sugar, egg and vanilla extract in a mixer on medium with the paddle attachement until well combined.
3- Switch mixer to low and add all your dry ingredients slowly (you don't want a flour volcano). Let this combine for about 3 minutes.
4- Add in your pretzel bits and chocolate chips.
5- I added a little olive oil. I found this helped combine and bind everything.
6- Roll a spoon full of dough in between your palms to form a ball. Place on ungreased cookie sheet lined with wax paper. Flatten the balls of dough to make a larger thin cookie, leave it as a ball for small thick cookies.
7- In a pan on medium heat melt your caramels.
8- Drizzle cookies with melted caramel and sprinkle with sea salt.
9- Try not to eat them all!
