Wednesday is usually the day I get you a post, but this is special guys! It's #IceCreamTuesday (marshmallow edition)!! I joined up with some blogger friends to make my ice cream with marshmallow, NY Foodgasm style! The Summer Weight Loss Challenge Begins...
OKAY, the timing is NOT ideal! After all the Summer Weight Loss Challenge like JUST kicked off. I apologize to ALL of you since I was slacking on my social media for this event. It snuck up on me, but this is annual event running from Memorial Day to Labor Day. The challenge is to lose 10 pounds from Memorial Day to Labor Day. That means having some ice cream from time to time and if you are treating yourself... treat yourself well with this ice cream!
The inspiration for this ice cream is the amazing dichotomy of women BOTH soft and strong. It is part of who I am... pretty and dressy by day and them hitting my workout like a BEAST by night! So jokingly I referenced this on my Instagram in this picture.... (Follow me here on Instagram.)

Hence Princess Badass- so I though loooong and hard about how a Princess Badass Ice Cream would taste? The only constraint for #IceCreamTuesday was that it had to have marshmallow. Well, I thought, that has the princess part covered. A princess is sweet and gooey, but how about the Badass?? I struggled asked for help from Facebook, then I called my friend Will, one of my best friends that was a chef for many years. We came up with the answer together. I wanted it to be pink and pretty, but have a heavy kick to it. You know I love me some boozy desserts so I finally decided upon a cherry bourbon ice cream with marshmallow fluff swirls and bourbon soaked cherries. Is this girly and badass enough for you? Bourbon is definitely bad ass, I especially LOVE this Rough Rider Bourbon, local to long island, NY.
Why is this a Foodgasm?
Bourbon Cherry ice cream rippled with fluff and MORE bourbon soaked cherries, makes for a double dose of badassery with a side of princess. This is so rich and creamy and so much softer than ice cream from the store and soooo much more natural, it is worth ALLLLLL the work! Sooooo good!What you need
1/2 cup bourbon1 can of cherries (not cherry filling!!)
1 cup reserved light syrup (the syrup the cherries are packed in)
1 cup cherries (strained from the can)
1/2 cup sugar
1 cup lowfat milk
2 cups heavy cream
1 cup sugar (divided in half)
1 teaspoon bourbon vanilla extract
1/2 cup marshmallow fluff
1/3 cup dried cherries, soaked in bourbon 24 hours
How to make it
Before all this begins start by soaking 1/3 cup dried cherries in enough bourbon to cover all of them for 24 hours.... the magic begins here .1- In a medium sauce pan boil down 1/2 cup bourbon until it is about 2 tablespoons on medium heat, this should take maybe 10 minutes at most. Set aside bourbon, this will be used as an extract for bourbon flavor in the ice cream.
2- In a medium sauce pan again pour in cherries, juice and 1/2 cup sugar.
3- Reduce to about half on medium heat (should take 15-20 minutes), pulse in food processor.
4- Mix together cream, milk, 1/2 cup sugar, vanilla extract, the cherry syrup you made and the bourbon extract you made.
5- Pour slowly into an ice cream maker and churn for about 20-25 minutes.
6- Microwave marshmallow fluff for 10 seconds and fold into ice cream (placed in tupperware for storage) to create a ribbon of fluff throughout, then fold in the strained bourbon soaked cherries.
7- Place in freezer to set.
