Another pumpkin recipe ya'll (is it weird to say ya'll when I am from NY, LOL?)
A while back I saw these great no bake pumpkin cheesecake cups. Hello awesome fall dessert idea! So you just know I had to try something like them and do 'em my way.
So I cut the fat and the portion and made them as simple to make as possible. We all like a cute fancy looking dessert, but we don't gots the time... am I right?
These probably take all of 10 minutes to throw together and look pretty fancy too!
How do they taste? Like creamy pumpkin cheesecake, but maybe better since you don't have to wait like a whole day to eat it.
What is worse than spending all the time making the cheesecake.... WAITING to eat it. I see it in the fridge staring at me and I still have to wait to eat it!!
Seriously worst thing ever!
What you need
8 oz. light cream cheese1/4 cup pumpkin puree
1 teaspoon pumpkin pie spice
1 teaspoon vanilla bean paste or extract
2 teaspoons granulated sugar
1 tablespoon maple syrup
2 tablespoons lowfat milk
3 graham cracker sheets, crushed
How to make it
1- Put graham crackers in food processor to crush well.2- Place the rest of the ingredients in the food processor and combine well, scraping sides in between.
3- Put cream cheese mixture into piping bag
4- Layout your shot glasses and put a little graham cracker crumbs into each shot glass.
5- Pipe in some of the cream cheese mixture.
6- Optional: top with a little light whipped cream and a dusting of extra graham cracker crumbs.
