So in the spirit of fall and pumpkins and all that I created this delicious decadent and nutritious recipe! I looked up a couple Lara Bar recipes I saw online and changed it a bit to make it more something I would like that would also fit into pumpkin madness.
So instead of just adding nuts- I took it as pumpkin pie as I could. This recipe has real pumpkin puree, graham crackers and pumpkin seeds! Oh and it even has pecans!
How much more pumpkin pie does it get?! I cannot even stress to you enough how much they taste like pumpkin pie... majool dates are like magical. They sweeten and bind this while not making everything taste likes dates, but all the other ingredients.
A MUST try!
Raise the pumpkin roof ya'll!
What you need
1/2 cup pumpkin puree1 cup mejool dates (pitted)
1/2 cup pumpkin seeds (pepitas)
3/4 cup pecans
3 whole graham crackers (extra to dust with if desired)
How to make it
1- Place all ingredients into a food processor pulse/ blend until it forms a dough. Be sure to scrape off the contents off the sides a couple of time.2- To make into bars, place into the bottom of a loaf pan and refrigerate for a couple hours, then cut into bars (makes 5 bars)
3- To make energy bites, roll into balls and (optional) roll into additional crushed graham crackers. (makes 20 bites)
