You remember when you were a kid and your mom says "Eat your Vegetables", pointing to the frozen vegetables (peas, diced carrots, green beans and corn) she emptied into a pot with some water and spooned onto your plate? Yeah the kind that tasted like the allusive "mixed vegetable"- a bland, watery, fiber filled delight. Yeah no wonder I hated vegetables as a kid! Since changing my lifestyle I have discovered the joy of vegetables. The fresh, sweet and savory flavors they have all on their own. These roasted vegetables- yes VEGETABLES rock my salivary glands! Some fresh zucchini, squash, bell peppers, red onions, mushrooms salt, pepper and a tablespoon of olive oil can take you to heaven. You will taste the angels! Eating healthy and eating delicious are possible at the same time!
