Coconut Chicken with Apricot Coconut Curry Dipping Sauce

Seriously YUM- you have no idea how FoodGasmic this is!  Not healthy and not as easy as my other recipes, but well worth it!  I recommend this dish to impress some fellow foodies- that is what I did.

What you will need:
Chicken breast (as much as is needed to feed your people, I made 3), cut into bite-sized pieces.
coconut flakes (sweetened) 1/2 cup
panko bread crumbs 1/2 cup
flour 1/2 cup
buttermilk
1 egg
3 tbsp butter

Sauce:
1/4 cup coconut milk
1/2 cup apricot jam
2 tsp red curry paste

Heat oven to 400. Combine bread crumbs, flour and coconut flakes in a bowl.  In another bowl beat egg and add buttermilk. Dip chicken pieces in buttermilk egg mixture then into the breadcrumb mixture, repeat as needed and place on parchment paper on pan. Melt butter and pour over chicken. Bake about 20 mins.
To make sauce just combine ingredients in a blender.

Seriously AMAZING!  A must try for the FoodGasmic!
