Lasagna during the week, NO WAY....well usually! But if you do it my way you can make lasagna anytime! I cut time in three ways: no sauce to prepare, no boiling the noodles and no stir frying, cooking or cutting vegetables. How you ask well here is what you do...
What you'll need:
1 medium package part skim ricotta
low fat shredded Italian cheese
No bake lasagna noodles
1/2 bag frozen zuchinni
1/2 bag frozen spinach
1 can crushed tomatoes
oregano
basil
dash of red pepper flakes
salt
pepper
How you do it:
Combine crushed tomatoes and all seasonings in a bowl and mix. Add some sauce to the bottom of the lasagna pan and then add first layer of uncooked noodles. Add a third of the container of ricotta and spread in an even layer with the back of a spoon. Pour in some of the frozen vegetables add some sauce and sprinkle in some of the Italian cheese blend. Repeat this step once more. Lastly for the top layer, just add the noodles sauce and sprinkle on more Italian cheese. All this should take maybe 15 mins, then just bake at 350 for 30-40 mins.
