Meatloaf Cupcakes with Mashed Potato Frosting and Cheese Sprinkles

Why is this a Foodgasm?  Like you have to ask?  Come on.....flavorful meatloaf in the shape of a cupcake and covered in mashed potato "frosting" and cheese "sprinkles"......oh and did I mention it's good for you too!  Oh yeah, get in my belly!  

This is a 5 point foodgasm...including mashed potato frosting and cheese sprinkles! (Recipe yields 14 servings)


What you need:

For the meatloaf cupcakes:

1 pound of ground turkey
7 slices light whole wheat bread
1 zucchinni
2 cups baby carrots
1 1/2 medium vidallia onion
2 eggs and 1 egg white
1 tbsp olive oil 
2 garlic cloves
2 sprigs of fresh cilantro
1 spring of fresh oregano
3 tsp salt
5 tsp fresh ground black pepper
4 tsp chilli powder

For the mashed potato frosting:

5 small red potatoes
1/4 cup 1% milk
2 1/2  tbsp light buttery spread
3 tbsp light sour cream
2 tsp chives
dash of salt
pepper to taste

How to make it:
Meatloaf "cupcakes"
Preheat oven to 350 degrees. Take 2 cupcake tins (this recipe yields about 14 meatloaf cupcakes) and brush each cup with olive oil. Toast all slices of bread in your toaster to toast while you perform the next step. In a food processor grind up all your veggies and herbs (carrots, zucchini, onion, garlic, cilantro and oregano). Place in a large bowl adding in your meat, eggs and spices (salt, pepper, chilli powder). Take all toasted bread slices and grind them up in your food processor. Combine all in that large bowl, the best way is just to dive in with your freshly washed hands (the texture works best mashed and mixed with your hands). Then fill each muffin tip almost to the top, I would leave like 3/16 of an inch.  Learn from my mistake, if you fill them all the way they rise a bit and the fat will get all over the top of the tin. Bake for 30 mins.

Boil your potatoes about 15 mins (until a fork easily passes through the potato).  Once again using your food processor add in the potatoes, light buttery spread, sour cream, salt, pepper and chives. Let that process together until its the texture of a frosting.

To serve:
Place meatloaf on plate and put a dollop of frosting and sprinkle with reduced fat cheese.
