Mini Butternut Squash Quiche with Bacon

This is the quiche as one large quiche, sadly I did not get pictures of the mini quiches- which are amazing!
Why is this a Foodgasm? Since we are quickly approaching Autumn what better way tp celebrate with some butternut squash deliciousity?! This brings together the creamy texture of butternut squash with the spices of the season, a dash of both nutmeg and cinnamon along with the candy of meats BACON! Wow wow wow! Bring it on!

This is a 1 point foodgasm (per mini quiche)!



What you need:
2 1/2 cups Diced butternut squash (frozen)
2 Boxes mini fillo shells (30 total)
3 tbsp Cream cheese
3 tbsp Nonfat greek yogurt
1/3 cup Shredded Parmesan cheese
1 Large egg + 1 egg white
2 Slices of bacon (pre-cooked)
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/4 tsp Salt
1/2 tsp Pepper

How to make it:
Preheat oven to 415˚. Microwave the bacon on a paper towel until cooked crisp, about 1 minute. Pulse in food processor until it is in small bits, set aside in a bowl. In a microwave safe dish, heat butternut squash for about 3 minutes. Place all ingredients in the food processor (except fillo shells and bacon) and pulse until smooth. Place fillo shells on cookie sheets and fill with the mixture.  Lastly sprinkle with bacon bits. Bake at 415˚ for 5 minutes and 350˚ for another 10 minutes.
