More Caprese: Caprese Panini with homemade pesto



Why is this a Foodgasm? It pains me to answer this--it is magic in your mouth. The perfect combination of flavors and textures, sweet and salty, acidy and creamy, smooth and crunchy. You got your fresh mozzarella, homemade pesto along with the acid of the tomato all encased in crunchy thin Italian bread! Hooray foodgasm!

This is an 8 point foodgasm (by my estimate since I scooped out the inside of the Italian bread)

What you need:

1 large piece Italian bread (mine was probably 1/4 of a loaf)
2-3 slices fresh mozzerella
2-3 slices of fresh tomato
A few Basil leaves

*Pesto:
4 tbsp pine nuts
1/3 cup olive oil
1/2 cup Parmesan cheese
1 1/2 cups basil leaves
5 cloves of garlic
*(approximations...if it is too runny add more basil and pine nuts, if too thick add more oil. I like mine very cheesy!)

How to make it:
Take all your ingredients for the pesto- put em in the food processor and pulse it until you have your desired texture (make any modifications to the recipe if necessary). Take your piece of Italian bread and slice in half length-wise (across). Spread pesto on one side of the bread add on a couple basil leaves, sliced tomato and fresh mozzarella. Place on the other half of bread and press on a George Foreman or Panini Press.

Presto!! Enjoy this Foodgasm- this is amazing and easy!  You will also be surprised how amazing FRESH Pesto is!
