Why is this a Foodgasm?
Apple Pie is just so yesterday. I mean it is a classic and all, but you know we can always step it up a bit and make it more exciting, ummm and add bourbon! Yes please, you know that's how I roll! I don't f&$k around in the kitchen.Sometimes a classic is key, if it is done perfectly, BUT we all have had apple pie, so let our palettes explore a bit further.
This idea was a no brainer, I wanted to make apple pie more special but how?! So bourbon came to mind and some maple syrup. Tis the season. I thought of adding bacon, but I thought that may be tooooo much!
Technically this is not low fat or really healthy, but these are in mini portion controlled sizes so, it ain't so bad. I also really let the apple shine without adding any additional sugar, just what comes from the bourbon and cider.
What you need
4 honeycrisp apple, cubed4 teaspoons light butter
2 shot of mulled cider
2 shot bourbon
1 sheet puff pastry
Maple Syrup to drizzle over mini pies
How to make it
1- Preheat oven to 350º
2- Cut one sheet puff pastry dough into 12 equal parts.
3- Spray the bottom of a muffin pan with cooking spray and stretch each piece of puff pastry dough over the bottom of each muffin cup to form a small bowl.
4- Bake according to package instructions
5- While the puff pastry is baking, put a medium frying pan on the stove with medium heat.
6- Melt 4 tablespoons light butter
7- add in 4 honeycrisp apples, diced and sautée until they are less stiff and Caramelized a bit.
8- Pour in 2 shots of bourbon and 2 shots of mulled cider.
9- Allow this to reduce a few minutes.
10- Spoon some of the apple mixture into the puff pastry bowls.
11- Drizzle with maple syrup. You can even dust with powdered sugar for pretty presentation.
