Pesto Quiche

Pesto Quiche Crust-astic option

Why is this a Foodgasm? A little pesto goes a loooong way here! Just imagine a nice quiche that is creamy and soft but add in the punch of pesto and you got some taste bud magic! I LOVE the way this came out, sweet, salty creamy with some garlic flavor, YUM! I made this recipe two ways: inside of a ready made pie crust and a lower carb option by using muffin tins and paper wrappers with a slice of potato on the bottom.

Low Carb Individual Pesto Quiches
Yields 8 servings




What you need:

2 eggs + 2 egg whites
3 tablespoons pesto (recipe here)
1/2 cup nonfat Greek yogurt
1/2 cup fat free mozzarella cheese
1/3 cup shredded Parmesan Reggiano
2 slices prosciutto
4- 8 slices of oven fried potato (4 for large quiche, 8 for mini quiches)
Freshly ground pepper to your liking

Optional:
Fresh basil and pignoli nuts for garnish
Ready Made Pie Crust (To make the crust-astic version)
Paper muffin wrappers (To make the low carb and mini version)

How to make it

1- Preheat oven to 415 degrees.
2- Assuming you already have some pesto already made if not, see how to make pesto here.
3- In a large bowl beat eggs with a whisk.
4- Combine in: 3 tablespoons pesto (recipe here), 1/2 cup nonfat Greek yogurt, 1/2 cup fat free mozzarella cheese, 1/3 cup shredded Parmesan Reggiano
5- For crust version- Arrange and add on fresh basil sliced prosciutto and oven fried potato to top of quiche. For low carb and mini version- place paper wrappers in 8 of the individual spaces in a muffin pan and place oven fried potato slice in each and garnish with some prosciutto and pignoli nuts.
6- Bake on the oven 10 minutes at 415 degrees and lower to 350 degrees for another 15-20 minutes for the mini quiches. For the crusted quiche it can take up to 30 minutes at 350 degrees.
