Roasted Vegetables and Sausage with Herbs and Balsamic Vinegar- Augmented Pinterest Recipe


Why is this a Foodgasm?

So many beautiful flavors play together- sweet, salty and savory. Fresh fennel bulb, red onions, peppers are not only a feast for the eyes, they have magic....delicious magic!

This is a 6 point foodgasm! (Recipe yields 7 servings)



What you need:

3 Hot Italian sausages
4 Potatoes (peeled halved and sliced)
1 Bell Pepper (sliced)
1 Red Onion (halved and sliced)
1/2 Fennel Bulb (cored and sliced)
1 cup  Baby Carrots
1 1/2 cup Chicken Stock
3 tbsp Balsamic vinegar
Various Italian Seasonings of your choice (I used a little red pepper flakes, oregano, fennel, rosemary, sage)
Salt and Pepper to taste
3 tbsp EVOO

How to make it:

Preheat oven to 450.  In a large baking pan (the bigger and deeper the better) add the EVOO, sliced potatoes, fennel, onion, peppers, and carrots.  Toss with salt and pepper, cover with aluminum foil and bake 45 mins.  Brown the sausage in a frying pan while this is baking, set aside.  After the 45 mins is up cut sausage on the diagonal and add in.  In a separate bowl mix together balsamic vinegar, chicken stock and herbs and spices, pour mixture on top of the veggies and sausage.  Bake uncovered for another 25 mins. The smell is just soooooo good!  Beware you will want to keep eating this!

As a side note: this was absolutely amazing, but next time I am definitely going to make a balsamic reduction to drizzle on top!
