Easy Quinoa Spanakopita Roll Ups

Spanokopita aka Greek Spinach Pie is delicious, but can be quite labor intensive, so I made it easier and put an extra healthy spin on it by adding quinoa! This Mediterranean delight is light on calories and high in flavor!


I am half Greek guys, in case you didn't know. I throw a while lots Mediterranean mayhem and recipes your way. Ever heard of the Mediterranean diet? Well these people live healthy and eat healthy naturally. So I thought I would send some Greek action your way.  It's a good thing too because after the holidays- it's time for some holiday detox bitches... I know you been bad. I sure know I was. Yeah I was a bad bad girl! I must have gone through like 4 pounds of butter from all the baking over the holidays!

Eggplant Parmesan "Meat"balls





So my gratuitous v-day post was last week, but I made this recipe around the same time and all I could say is "Damn these are good" every single time I ate one. I never posted my recipe for veggie infused meatballs, but this is a staple to me. The perfect transformation of a food I love so very much to something soooo much healthier. The secret is that I add lots of hidden veggies to my meatballs. Seriously, no one will know since they a chopped up in the food processor. So I though why the hell not add the meat at all.... and use eggplant!! Since you are going to cover it in marinara anyways later on, why not add a little fresh mozzarella cheese over top. So this magical concoction was born!

Why is this a Foodgasm?

This has EVERYTHING you love about Eggplant Parmesan, even the breading, in a crispy little ball dripping in marinara and melted mozzarella cheese. They are NOT fried, they're baked! So you are losing LOTS of calories and fat and keeping ALL the flavor. These are sooooo good, I am making them twice and I almost NEVER make the same thing twice! Even better: they are not nearly as time consuming as Eggplant Parmesan.

So I don't have kids yet. But you know, I think that kids would eat these guys up! If you have vegetarian friends coming over- you can make this and both eat meatless, healthier and be completely satisfied. Actually this is one dish that makes me think, maybe I can be vegetarian someday. It is that good. Another great thing is you can make this as an appetizer or serve these over pasta as an entree.

Double Stout Guinness Sliders


Why is this a Foodgasm?

Who doesn't like to go out for some burgers and beer? Well I took the two and fused them into the perfect combination they were destined to be! I marinated the ground beef in Guinness, then to add a double shot of that stout action I made caramelized onion with a stout reduction! But wait, there's more! To add to the delicious Irish action I topped these sliders with Dubliner cheese, a sweet aged Irish cheese! I even cut the fat using lean ground beef for the sliders, because I love my heart and yours!

Pineapple Mango Guacamole

Why is this a Foodgasm?

Confession: I am in love with a fruit. Mango be thy name! Beautiful, sweet, juicy and slightly citrusy mango.  My second favorite, fresh pineapple, put 'em together and what do you got? A foodgasm! I have been adding pineapple to my guacamole for a very long time, I figured if lime juice is essential, why not add other citrus flavors? This recent addition of the mango really made me fall in love. It's like having fruit salsa and guacamole together. It has that salty, creamy and sweet thing happening all at one. It like a flavor and texture Ménage à Trois.

This little treat is just perfect for the winter season. Tart, sweet and creamy all in a crunchy wonton dusted in powdered sugar: it's as pretty as it is delicious! Then dip these sweet little wontons into some Dark Rum Marmalade sauce and you will just have kicked it up two more notches of amazing!

Why is this a Foodgasm? Sweet and creamy butternut squash nested in a crunchy wonton and covered in a sweet and spicy apple cider reduction, how can this not be a foodgasm? You will do your own little happy dance when you eat these up!

Classical Fusion: Greek Nachos

Why is this a foodgasm? I aint perfect, I'm only half Greek (LOL!). This is a nod to my Hellenic Heritage. Baked pita chips topped with ground lamb, feta, yogurt sauce, tomatoes, cucumbers and red onions, it's the a gyro appetizer. Tangy Lamb-azing and creamy Food Love in yo mouth! You know you need this? Best part is I made it with some of my leftover Slow Roasted Rosemary Garlic and Lemon Leg of Lamb. It only took 30 mins to make!

Mini Butternut Squash Quiche with Bacon

This is the quiche as one large quiche, sadly I did not get pictures of the mini quiches- which are amazing!
Why is this a Foodgasm? Since we are quickly approaching Autumn what better way tp celebrate with some butternut squash deliciousity?! This brings together the creamy texture of butternut squash with the spices of the season, a dash of both nutmeg and cinnamon along with the candy of meats BACON! Wow wow wow! Bring it on!

This is a 1 point foodgasm (per mini quiche)!
