Spinach and Feta Strata


I cannot get enough of the spinach and feta combo. I made Spinach and Feta Orzo, I made a Spinach and Feta Salad and now I got for you a Spinach and feta Strata. It is part quiche, part potato and part fritata. In fact, I had a really had time naming this, LOL. But a food bloggers friend of mine came up with something sorta like this and called it a strata, so thanks Joanne from Joanne Eats Well with Others. You saved me on this one!

Why is this a Foodgasm?

Spinach and Feta, it is magical and delicious and totally Greek. I like to give a nod to my hetitage when I can and they knew what they were doing with this flavor combo. Salty, creamy and you got a little bitter from the spinach, it just works. Then of course I add in some caramelized onions, garlic and you got yourself a full blown Greek-gasm. I love that this has a layer of potatoes too. It's a great filling meal, especially nice with a side salad for breakfast, brunch, lunch or even dinner.

Comfort Food Fusion: Red Curry Meatloaf with Coconut Mashed Potatoes



Why is this a Foodgasm?

Does this sound crazy? If I didn't make it I would say yeah that is pretty crazy, but you know what? This is crazy amazing. Like meatloaf kicked up about 10 notches! So aromatic and just the right amount of spiciness. They are also LOADED with veggies! This is lowfat and a foodie's wet dream. American-Thai fusion happened and their baby was oh so beautiful!

I was on my way home and I was thinking I have some turkey chop meat and some veggies, I am gonna make a simple meatloaf and then I got home, opened the fridge and saw my beautiful red curry paste just chillin in the mason jar and I knew, these two needed to be married. An arranged marriage, but once together they realized that it was destiny! Why not add some Thai Red Curry, while I am at it, let's make mashed potatoes...coconut mashed potatoes for the full Thai effect!

Spicy Red Curry Coconut Chicken Soup



Why is this a Foodgasm?

This is my own version of Tom Kha Gai, a Thai soup. I love Thai food, so I made my own spicy coconut curry soup! This is sour, sweet and spicy all in one! You got the creamy from the coconut, the spicy from the curry and a little sour in the end with the juice of 1 lime! This is redicu-licious!

The reason I made this- my husband had a cold. So I thought chicken soup, but why not this spicy Thai chicken soup?! This cleared out his sinuses! It was as if his nose were a faucet. The next day he felt sooo good he decided to insulate the basement! A win-win!

Slow Roasted Rosemary, Garlic and Lemon Lamb with Red Potatoes



Why is this a Foodgasm? The heavenly smell of my home when I was roasting this lamb was almost enough to transport me to ecstasy! The sweet taste of the lamb with the acidity of the lemon and rosemary and the edge of the garlic was both traditionally greek with a modern american twist. I bit into the sweet, juicy and tender lamb and almost cried! I have never had lamb this good!!

This is a 5 point foodgasm (per 3 oz. serving of meat)!

Meatloaf Cupcakes with Mashed Potato Frosting and Cheese Sprinkles

Why is this a Foodgasm?  Like you have to ask?  Come on.....flavorful meatloaf in the shape of a cupcake and covered in mashed potato "frosting" and cheese "sprinkles"......oh and did I mention it's good for you too!  Oh yeah, get in my belly!  

This is a 5 point foodgasm...including mashed potato frosting and cheese sprinkles! (Recipe yields 14 servings)
